The story
of noire

Every dish has an origin. So does every table.

Cuisine Introduction

In our kitchen, we cook with intent. Every seating is built around bold flavors and striking plates—the dark and the vivid side by side. The food is elevated but never fussy, experimental but never random. Each dish is designed to be tasted slowly, talked about, and remembered.

Executive Chef Jamil Dawodu

I learned flavor before I learned to cook. Growing up in a house with a Nigerian father and a mother from Brooklyn, I spent every hour I could in the kitchen beside my parents—and their food quietly set the standard I've chased ever since. Bold, soulful flavor was simply what food was supposed to be.

That's the heart of Noire. I cook with intense flavors because those are the ones that stay with you, and my love of the world's kitchens—Nigerian, Jamaican, Peruvian, Thai, Japanese—means I'm always after the pairing you didn't expect but can't forget. I want you to leave my table wondering why no one ever put those flavors together for you before. Noire is a dream I'm finally cooking out loud.

My Process

A look behind the scenes

Before the lights dim and the first plate lands, this is where it all comes together. A glimpse behind the curtain at Noire.

Ingredient Selection

Every dish starts at the source. We choose ingredients at their peak—bold, fresh, and worth building a night around—because flavor this intense can't be faked.

Preparation Technique

This is where raw becomes remarkable. Every single component is coaxed, cured, seared, or slow-built with intention, so every bite lands exactly as it was meant to.

Plates your eyes feast on

We eat with our eyes first, so no plate leaves the kitchen until it's beautiful. Color, contrast, and composition turn each course into something you'll want to photograph before you taste.
